先日、秋田、青森、岩手の三県をまわってきました。
東京では桜が満開だったのに、こちらの木々は芽が出ているだけ。
名残雪も歩道に残るぐらいなので、桜はまだ先・・・残念ではありましたが、自生している
「ふきのとう」や「福寿草」を何度も目にしました。
上を見上げても枝ばかり、足元を見ても土色と、名残雪のかたまりしかない世界に、優しい黄緑色のふきのとうや、可憐な黄色い花を咲かせる福寿草。遠くからでもその存在は良く分かります。
春が来ている！と思うと、数日滞在していただけの私でも嬉しくなってしまいます。
そんなふきのとう、各地でてんぷら、つくだ煮、味噌和えなど、さまざまに調理されて食卓に並びました。ふきのとうは、名前の通り、ふきの花のつぼみの事で、葉が出る前に、つぼみだけが幾重にも苞(つぼみを包む葉)に包まれて、独立して顔を出します。放っておくと、あっという間に茎が伸びて花が咲きます。葉は地下茎でつながっていて、遅れて出てくるのです。
私は自生しているところを初めてみましたが、実は全国各地の山野に自生しているので、ご覧になっている方もいらっしゃることでしょう。旬は暖かい地方ほど早く、寒い地方は3月から4月です。
桜は見られなかったけれど、私はふきのとうの旬に立ち会えたことになりますね。
ふきのとうは苦いからあまり・・・とおっしゃる方も多いと思いますが、実は産地によって苦味に差があるそうです。暖かいところのものは幾分苦味が薄く、寒い地域のものは苦味が強いとか。
強い苦みが、厳しい寒さを乗り越える中で蓄積してしまった老廃物や、毒素を排出することで、体を目覚めさせようとするのでしょう。１節によると、冬眠明けのクマが一番初めに口にするのもふきのとうや、山菜だとも言われています。
取れたてのものや、つぼみが小さいほど苦味は少ないですが、デトックス効果を期待して、あえて苦味に強いものにトライされるのも良いのではないでしょうか。
