今日から新学期。
このところの急激な冷え込みで、三月中ごろから咲き始めた桜も、
まるで帳尻を合わせてくれたかのように、新たな門出を祝ってくれている
地域も多いと思います。
皆さんは春の訪れをどんなところで感じますか？
日差しの明るさでしょうか、色とりどりの花でしょうか、八百屋さんの店先に並ぶ
山菜でしょうか。
おやおや、鼻のムズムズ・・・なんていう方もいらっしゃいますか？
毎年私が感じているのは、「かますご」です。
兵庫県の釘煮で有名な「いかなご」、釘煮に適したサイズは新子と呼ばれるくらいの新鮮な幼魚を使いますが、3～15センチぐらいの釜茹でしたものを「かますご」と、関西では呼んでいます。
中部、関東地方では「小女子(こおなご)」稚魚を茹でて干したら「かなぎちりめん」など、呼び名がたくさんあり、その由来も諸説あるようです。
スーパーなどでは、2月末ごろから出回るのですが、その時はまだ細くて小さくて、脂も乗っていません。しかし、まだ寒いのに、もう春は少しずつやってきたのだなと感じられます。
そしてあっという間に大きくなって、よく太って3月中ごろには美味しくなっていくのが店頭で見るだけでもわかります。
カルシウム含有量はトップクラスで、100グラム中500㎎です。
これを我が家ではさっと焼いてポン酢をかけて頭からしっぽまで食べるのです。
旬がなかなか感じられなくなっている昨今ですが、食卓に少しずつ成長する「かますご」が並ぶと、
家族は春の訪れをほのぼの感じています。
唐揚げや、てんぷらにしてもおいしい「かますご」。この時期しか出会えない味、お試しくださいね。
